Fortunately the kitchen has not taken a huge hit in terms of technology taking over but adjustments, improvements, and changes have come about in the past decade that make it important to never forget the basics.
For instance when was the last time you cooked with annatto extract or another form of extract that was not chemically produced in a large factory some where? Odds are you have never cooked with product such as annatto considering its age, and the fact that similar products are available more cheaply considering the fact that it is not necessary to go out and find them.
Lets also not forget the type of cooking equipment that we use these days. In the olden days there were only stove tops and outside grilling machines. These days however you have hulk hogan grills competing with George Foreman grills and there are plenty of others in between. These products, which claim to get rid of the grease and fat of your food may work fine, but do we not care about flavor and such any more?
It might sound crazy but the fact of the matter is simple, we need to make sure old traditions are not lost. I am personally Italian so I still go to Grandmas for Sunday supper which she has been hand cooking for nearly 50 years. Other kids however go over to eat ordered out pizza, or pasta with a fake sauce from the can, which im sure cannot taste very good. Whats most important however, is that we keep cooking and eating as a family activity that can be shared with all. Its one thing to cook for yourself, but when you can share such an experience with people that you deeply care about it multiplies the experience greatly.

The Economics of Beef Cuts

It’s not really fair, however, to lump all beef together in the same dish. In fact, there are nine different primal beef cuts on a cow, which split up into dozens of other cuts, which in turn create a virtually unlimited arsenal of protein packed, delicious entrees.
The characteristic of beef which has the most direct effect on its cost is the tenderness. The most tender meat of the animal are generally in the places of the cow where it was least active when it was alive (assuming you’re not eating a live steer). The ribs, for instance, are where you find the wonderful Delmonico cut, and the short loin is where Tbones, porthouses, and filet hail from. While all of these cuts are incredibly tasty grilled and on their own (well, maybe with a little A-1), they’re also very pricey.
Unfortunately, a lot of people are under the impression that to get the best flavor from your steak, you have to spend a fortune. This simple is not the case. The best cuts of beef aren’t necessarily the most expensive. If you know how to cook them, they’re all the best cuts. Chuck, which is the muscular section around the front shoulders is very tough, and real chewy if you decided to grill it, like you might with a rib-eye. However, chuck is wonderfully flavorful, and you can unlock its taste by using a marinade to tenderize it. Learning how to cook the tougher beef cuts like the chuck and the round will not only save you a lot of money, but they’re typically the leanest, healthiest portions as well.

Green Bean Coffee

The story is about how this guy trades his family cow for a couple of beans and gets a big scolding from his mother when he returns home with those useless beans and lost a cow in the process. These beans though seemed to be useless, they germinated in Jack’s back yard into super tall vines that reached into the sky. And the story ends when Jack manages to steal some goodies like gold from the giant who lived in the skies above and even killed him in the end. Though the green beans that I am talking about here are not magical beans, I am talking about green bean coffee which is actually a coffee making company.

I hope that I have got the right audience here, as in I am looking for people who share a similar interest of mine which is that you all love to drink tea! Then there are also so many teas to choose from. Some of my favourites include assam tea, camomile tea, earl grey tea and maybe green tea. There are just so many types of tea in this world that it is amazing!
Tea has been shown to contain antioxidants and thus good for health. One thing bad about tea is that it contains caffeine and thus some people may kind of get addicted to it. Similar to coffee which also contains caffeine, morning tea drinkers drink tea to allow you to get perked up in the morning and get a fresh buzz to start the day. Another interesting thing is that people either like to drink coffee or tea but not both. I guess there may be some conflict of interest if people like to drink both beverages or maybe drink both beverages in the morning as well. But I guess more people like to drink tea because there are more varieties of tea than coffee. Even Africa has tea and have you heard of the South African rooibos tea? There is just plenty of tea to go around for everyone.
If you need tea but without the caffeine, you can also try out camomile tea. Known as a soothing tea that can calm the nerves, camomile tea is the ideal tea for those who intend to have a good night’s rest in bed. Then camomile tea is also known to help the throat when it is not feeling good. The best would be to mix some honey with the tea and drink the mixture for soothing effects on the throat.

Easy Pumpkin Soup Recipe

As soup falls into the category of ‘comfort food’ with its warming and wholesome ingredients, it is an excellent way to provide a healthy, filling and yet inexpensive meal for your family.
To see just how easy it is, follow this pumpkin soup recipe.
All that is required is 2 tbsp olive oil, 2 onions, 1 pumpkin, 700ml vegetable or chicken stock and 142 ml double cream.
Simply heat the olive oil in a large pan, add the chopped onions for a couple of minutes, then the peeled and deseeded pumpkin after chopping into chunks.
Leave for about 8 minutes, stirring occasionally before pouring in your stock.
Season with salt and pepper and bring back to the boil, then leaving the soup to simmer for a further 10 minutes.
Finally, add the cream and return to the boil before pureeing the soup to give a beautiful pumpkin soup.
For one of the easiest soups ever, try this potato soup recipe.
All you need to make soup for four are four large potatoes, 1 cup celery, chopped, 1 cup onions, chopped and 1-2 cups of milk, plus a little salt and pepper.
Put your peeled and chopped potatoes in a saucepan with the onion and celery. Almost cover them with water and then bring to the boil. Turn down the heat to simmer for 25 minutes or until the potatoes are soft, then mash the mixture leaving a few chunks if desired.
Pour in the milk and season with the salt and pepper to desired taste.
These two easy soups require little preparation, the ingredients can often be found in any home and there is no need to buy any new and expensive kitchen equipment.

When Homemade Chicken Curry Recipes Go Bad

Thankfully if you are making a homemade curry and things begin to go wrong, there are some good hints and tips to help you avert disaster, and recover the situation. Of course, if you forget about your curry and wander off to do something else, only to return two hours later, then you’ll need some extra tips on how to clean kitchenware! So there are limits to these hints; be prepared to start the recipe over, if things do go past the point of no return.
One of the most important points to get right when cooking a curry is browning the onions – getting a deep golden color and sweet caramelized taste. This involves cooking for a long time over a low heat with stirring. So tip number one concerns “burning the onions”. If you burn them, remove the burnt bits and transfer the rest to a new, clean pan; otherwise you run the risk of that burnt flavor ruining the recipe. In many cases, it is better to discard the onion, and start again and you will only have wasted an onion, rather than destroying the whole thing.
Seasoning is very important also. Making a homemade curry too salty destroys the balance and flavors of the spices, as well as being extremely bad for your health. Tip two, for removing salt. If you accidentally add too much salt, add some pieces of potato, or some dough. Continue cooking until the stock has reduced, and then remove the potatoes or dough, and top up with fresh water. The potatoes/dough will have absorbed a lot of the extra salt.
Tip three is about the chili heat of your curry. Always err on the side of “mild”. While you can reduce the heat of a curry that turned out too hot, it is always easier to deliberately start with a small amount of chili, and then add more if it isn’t spicy enough. To do this, simply fry the extra chopped chili, with some curry spices in a little oil, and then add it to the curry. Make sure you remember how much chili you added in total, so next time you cook the recipe you will know roughly how much to add without needing to continually adjust.

Grilling The Perfect Burger
Posted on January 7th, 2010 No commentsBarbecuing is an art form and figuring out how to grill the best burger usually takes a lot of trial and error. I hope to save you some time and fill your belly with some good eats by teaching you some tricks to improve your burgers and grilling technique.
The best burger recipe will always start with freshly ground beef. For more flavor choose a grind that has more fat, like a 70/30 lean to fat ratio. Your burgers will shrink a bit more on the grill, but it will have more flavor. After you have your beef, roll them into balls of equal weight. Most people will make them 1/3 to 1/2 pound, using a scale can help you make sure that you get it perfect every time. After getting the patties into balls, run them through your burger press to get perfect and uniform patties. Be sure that you have patty paper under it so you can easily remove it from the press.
Grilling the patty is easy once you know what you’re doing. The most important thing is that your grill grate is hot so that you can create the perfect char marks. Once the patty hits the grill, season it with a healthy amount of salt and pepper (80/20 salt to pepper). Leave it there for about a minute and a half, then give it a 30 degree turn to get the diamond char marks that you see in restaurants. Once the juice starts to pool on the top of the patty it’s time to flip. Again, leave it there for about a minute and a half then give it another 30 degree turn. The final side will take about two minutes to get to medium rare, if you want it more well done leave it for about 30 seconds for every step more cooked you want (medium, medium well, etc.).
Following those simple steps will get you restaurant quality hamburgers every time. You can dress it however you want (or not at all!). A great burger is truly a work of art, and the perfect patty is the best medium to work with!
